green eggs and ham!
After returning from an amazing trip abroad to Argentina, I was in need of some serious meat and booze detox. I decided to try a refreshing cold cucumber avocado soup. It was delicious for lunch and decided it would make for a tasty addition to my morning eggs.
Cucumber Avocado Soup: round i
4 avocados
6 small cucumbers
1 green onion
fresh dill
salt & pepper
splash of milk
drizzle of olive oil
Simply blend all ingredients and season to taste. Garnish with chopped walnuts or a drizzle of truffle oil. Serve immediately or chill and serve for breakfast or lunch with eggs.

Cucumber Avocado Soup: round ii
Pour a small bowl of prepared soup. Float two Poach eggs on top of soup. Sprinkle with a pinch of fresh dill and a sharp cheese, like parmesan or manchego (optional). Drizzle with truffle olive oil. To complete the Dr. Seuss reference, top with crispy bacon lardons!
