gingerbread time.

Orange Gingerbread.Ingredients:

2 eggs, separated
1/4 cup palm sugar
1 tbsp maple syrup
1/4 cup butter
1 cup teff flour
1 tsp xanthan gum
1 1/2 tsp baking powder
1/4 tsp ground cloves
1 tsp ground cinnamon
1/4 tsp ground ginger
1/4 tsp sea salt
1/3 cup blackstrap molasses
1/2 tsp vanilla extract
5 Tbsp water
1 Tbsp fresh orange juice
zest of 1 orange
1/4 cup chopped walnuts

Preheat oven to 350˚. Prepare a spring-form pan with parchment paper.

Whip egg whites with 2 Tbsp sugar and salt to medium peaks.Cream remaining sugar with butter. Stir in egg yolks and whip until fluffy and pale.Combine all dry ingredients and spices. Slowly mix into butter mixture. Add orange juice and zest.Pour in molasses, water, and vanilla extract and mix until well combined. Fold egg whites.

Pour batter into prepared pan and top with chopped walnuts.
Bake 45-50 mins.

Grapefruit & Thyme Nut Brittle


Ingredients:
3/4 cup sunflower seeds
1 cup almonds, chopped
1 cup cashews, chopped
1/4 cup maple syrup
1/2 tsp ground nutmeg
1 tsp ground cinnamon
1/4 tsp cardamom
1/4 tsp ground ginger
1/4 tsp sea salt
1/2 tsp fresh thyme, minced
1 tsp grapefruit zest

Preheat oven to 350˚.

Prepare a baking sheet with parchment paper.

Mix sunflower seeds with half of the maple syrup. Combine spices and add to nuts. Stir in all other ingredients.

Spread nuts on the baking sheet and bake for 15mins. Check and cook for additional 15mins.
