Ingredients: 1 bunch carrots, halved or quartered 1 1/2 cups water 1 cup white wine vinegar 2 Tbsp apple cider vinegar 2 Tbsp palm sugar 1/2 tsp sea salt 2 cloves garlic, sliced 1 tsp fennel seed 1/2 tsp red pepper flakes 1/2 tsp coriander seed 3 whole cloves
Trim and place carrots into a large mason jar. Bring all other ingredients to a boil in a small saucepan. Simmer for a few minutes, then pour into jar, making sure carrots are covered completely. Seal jar and let rest for a few days.
